Toraja Sapan Minanga
It seems that at this time of year we start to head towards those places where the sun is shining. This time we are in South Sulawesi, an area that is second to Bali as a tourism attraction……
The highlands of Tana Toraja sit at over 2000 feet above sea level. At the highest growing areas coffee is harvested and then taken to the local markets for milling. This is where these superb beans originates, Sapan and Minanga.
Similar to its Indonesia counterparts, this coffee is sourced for its earthy heavy body. The final flavours are certainly evident due to the wet hulled method, but the higher density of the bean seems to allow the sweeter aspects to show through.
Wanting to highlight these characteristics we took it only slightly into the 2nd crack, keeping the punch of flavour but allowing the subtleties to work their way into the cup. The triple hand sorting certainly makes our job easier in this regard, the appearance is remarkable all the way through the roast.
The spicy, fruity tones of the coffee are there for those espresso enthusiasts amongst us, while the mouth-filling flavour allows the latte drinkers to start the morning with a jolt. Nobody misses out with this one, maybe that’s why there isn’t that much available to start with.
