Aged Kalosi

Aged coffee may sound a little unappetising, but it actually is an intricate process that is similar to the way that you would age fine wine. When I first heard the term, all I could think about was stale coffee sitting out for so long that it tasted bitter, but it’s quite the opposite! You don’t need to shy away from the term "aged coffee" because it provides a professional way to change the delicate flavours of the coffee product overall.  These changes typically include a muting of acidity and improved body, some defects can also be muted but typically due to the cost of holding the green coffee for an extended period of time the green selected for aging is of exceptional quality. During the aging process the coffee bags are rotated to allow the coffee to breath and change evenly. Aging coffee is a risky proposition for the person aging the coffee since there is no guarantee that even with utmost care that the aged coffee will come out as hoped. Aged coffee will typically start with a coffee that is high in body and low in acidity with the idea being to bring the flavour out, not create a new flavour. Located in southern Sulawesi, Indonesia, the Aged Kalosi is held as green coffee in for an extended time, 2-3 years, to allow natural changes to occur.   It’s grown between 1,000 to 1,700 meters.

With regard to roasting, this coffee has been taken to a darker roast which helps to accentuate the body aspect of the coffee.  This coffee also requires a longer resting period after roasting to fully even out (equilibrate the beans) therefore gaining the best taste profile possible.  As our coffee is always roasted freshly for you, you will certainly notice the coffee improve over the next 3-4 weeks, if you can wait that long that is!!
