Unlike coffee, there is no further processing required to preserve the natural flavour and aroma of the tea leaves; they are simply checked for quality and then bagged ready for use. Our selection of 12 teas covers a little something of everything. The range of Green Tea, White Tea, Herbal Tea, or Black Tea caters to the most popular of the classic tea colours (each one, the product of a slightly different harvest and oxidation
process).
Black tea comes from the leaves of Camellia Sinensis and is created by oxidising the freshly picked tea leaves until they turn black, before they are then dried. Oxidation enhances the flavour, strength and body of the leaves which releases more caffeine than you will find in other teas, giving black tea its strong stimulating character. Amongst our black teas, you will find the classic English Brekky alongside flavoured teas such as Earl Grey and Caramel Tea.
Green tea is enjoying rising popularity. Green Teas are ‘fired’ to prevent them from oxidising as with black teas and as a result, they display lighter more delicate flavours. Made from the leaves of Camellia Sinensis, green tea is processed by first steaming and pan-frying the leaves before they are then dried. In this range, we have Sencha and also two flavoured teas, Vanilla and Rose, all prized for their health qualities as well as their sweet floral flavours.
White Tea also comes from the leaves of Camellia Sinensis, but unlike other varieties of tea from this plant, the buds of Camellia Sinensis are picked just before they fully open, specifically when the buds still have white hairs on them. White Tea, like Peony, tastes smoother and sweeter compared to other green teas. Aged white tea also smells like rice and other dried seeds, while young white tea smells like fresh grass.
Although not strictly a tea, herbal infusions throughout history have been coveted for their medicinal as well as their ‘social lubricating’ properties. Herbal Teas can include a variety of dried and fresh flowers, fruits, leaves, seeds and other spices. Our dried Herbal Tea ranges from the most popular herbal beverages, Peppermint, Chamomile and Rooibos, to the ancient and delicious Masala Chai, (although commonly considered a herbal tea, it contains black tea).
A lot of coffee drinkers are also lovers of tea. From the beginning, we have had a range of teas that are sourced and procured with the same enthusiasm and thoroughness we apply to our coffee searches. Like our range of Yahava coffees, we source our teas only from the world’s finest gardens. Our range of leaf teas falls into four distinct categories: Black Teas, Green Teas, White Teas and Herbal Teas or herbal infusions.
All tea comes from the growing leaf tips of a bush called Camellia Sinensis and like coffee, tea thrives in hot, humid, tropical climates away from direct sunlight. The major difference between the variety of teas are the degrees and types of processing that are undertaken and the timing of the harvests.
